I’m a bit of a creature of habit. Routine keeps me stable when there are so many variables at play from day to day. Being a model forces you to get used to having no idea what tomorrow will hold for you. 7 castings? A 3-day shoot in another state? A completely free day that you later learn will end in a late-night test shoot? All are possible and occur regularly.

I love what I do but it definitely took some time to get used to all of the uncertainty. One of the ways I do this is by making sure I have a healthy, delicious breakfast from home. This smoothie has been on heavy rotation lately. It’s full of healthy fats and fiber and keeps me full all morning. The mint also wakes me up while the cinnamon keeps my blood sugar stable.

Mint Green Smoothie

  • 1 c almond milk
  • 1 c water
  • 1 c greens – spinach, kale
  • 1/2 c sliced cucumber
  • 1 handful fresh mint leaves
  • 1/2 avocado
  • 1 scoop plant protein
  • 2 tbsp chia seeds
  • 1-2 tsp cinnamon
  • 1 tsp turmeric
  • sprinkle of himalayan salt
  • handful of ice cubes
  • optional: packet of stevia, squeeze of honey, or a banana

Blend all ingredients in a high-speed blender. If you prefer your smoothie pretty sweet, add any of the sweeteners or fruit listed above. My vegan protein powder has added stevia which is usually enough for me. Serve immediately and top with all or any of the following: bee pollen, flaked coconut, blueberries, cacao nibs.
